The Forellenhof fish farm is located in a truly wonderful location at the heart of the Buhlbach conservation area in the Black Forest, within walking distance of our hotel. Hospitality and fish farming have a long tradition here, as well as their own quality. The former »Fischerstüble« became an impressive Black Forest house in 2017, following far-reaching renovation. The Forellenhof team offers fresh trout specialities and a hearty range of meals in the comfortable restaurants – the Forellenstube and the Buhlbachstube – as well as on the spacious sun deck. The Forellenlädle shop offers trout fresh from the smoker, as well as other delicacies to take away. On request, we are also pleased to organise private parties and celebrations. Drop in for a bite where all are sincerely welcome!

Enjoy the absolutely natural idyll and treat yourself to fine cuisine – the Forellenhof Buhlbach with its fish farm is a pleasurable experience for all the senses. The menu has been specifically matched to this special location and loving put together for you by our Bareiss chefs Oliver Ruthardt, Oliver Steffensky and Daniel Sorge.
The menu offers first-class, ingeniously concocted, à-la-carte dishes as well as hearty meals of top quality – classic and modern interpretations of specialities with our own home-grown trout and char, directly selected from the fish farm on demand, and prepared with maximum care. The fish dishes are supplemented and rounded off in culinary terms by vegetarian and meat dishes. Served with regional wines or freshly drawn pils. Cheers!
Prepared with care and used with awareness
We live for sustainable gastronomy and healthy nutrition, prepared fresh daily from regional products with low carbon footprints – environmentally friendly with organic quality. The nose-to-tail principle is one of the central tenets for our cuisine – out of respect for the animal and for the value of food. This is how specialities such as smoked trout tartare, small trout tarts, and trout stew come about, prepared by boiling the useful pieces and carcasses that cannot be used for our filet dishes.

The Buhlbach conservation area – a natural paradise
The impressive surroundings – the Buhlbach conservation area and the Black Forest National Park – are a major part of our overall concept. Nature is left to itself here, and protected against human interventions to ensure the survival of natural forms of vegetation. This is part of the Black Forest, whose primitiveness can be experienced first-hand and can be seen in its streams, floodplains, meadows and forest. Our commitment to this wonderful plot of land combines an awareness of tradition with a future orientation, providing great experiential value for our guests.
Preserving the location’s nature, as well as its attractiveness and history, is a very personal matter for us and has always characterised our philosophy.
